Belinkis (Lithuanian Potato Pancakes)

One of my favorite meals is potato pancakes, the way my mother made them.

Belinkis

4 med. to lg Russet Potatoes
4 T. Flour
1 T. Lemon Juice
1/2 Med. Onion
1 Lg. Egg
Salt and Pepper to Taste
(makes about 5 or 6 pancakes per tater)
For more, just add another Tablespoon flour for each tater.

Peel and wash your potatoes.  Pat them dry before grating.
This is the side you use to grate your taters, not the larger side.  You want them to be a pancake consistency.

The mixture looks like this.  I grate 1 potato, then add the lemon juice (to keep taters from turning brown) and stir it in.  Next grate the onion before continuing with the rest of the taters.
When the taters are all grated, add the egg and the flour and stir together til smooth. Salt and Pepper to taste.


Pour a bit of oil in a pan to cover the bottom.  Spoon your mixture into the pan with a Tablespoon.  Let it cook for about 2 mins. without touching them (so they don't stick to the pan)....

...til the outer edges start to brown.  Then flip them.

Cook on the other side another couple minutes.  You will have to keep adding more oil to your pan as you continue to cook more pancakes.

Drain them on paper towels.  Serve with sour cream or applesauce or butter, whichever you prefer.  
As you can see, I love mine covered in sour cream.

Store in covered container in fridge for up to 3 or 4 days.  Reheat for a minute in microwave to eat leftovers.

Not Able To Work on My Projects Lately

I've been too sick to do anything.  Its not the flu I know that, no fever, no coughs.  Just erupting from both ends with a stomach that's constantly turning and tossing for  26 hours straight.  No sleep for the wicked.  I can't remember feeling this sick for decades.

I think at last count there were 5 of us that caught whatever it was.  One went to the ER and they said she had food poisoning.  But 4 others of us got the same thing and we were never in the same room together let alone eating the same foodstuffs so I think the doctors were wrong.  Yes, we do live in the same building so I think its getting thru the ventilation system.

Finally I was able to catch a few hour naps here and there and I can report the worst is over after 2 days of heck and a 3rd day feeling improvement.    I just made a big pot of chicken rice soup and its settling nicely after 3 days of not being able to handle food at all.  I had a bowl and its staying down.  A good thing.

On an uplifting note, I lost 7 pounds which is the silver lining.

Lets hope things continue to improve so I can come back next week for updated pictures of my projects.

I Had To Start A New Blog.

For some reason I could not get into my usual blog to update with news and pictures.  Not being very techy, I tried whatever I could for 2 days, but to no avail.  Hence the new blog.

My latest project is a quilted wall hanging titles Romance of the Seahorses.  Its in fabric collage, a new medium for me and lots of fun.
These are the loving pair above, intertwined.  I have it laid on the background I chose, but I have still to add water plants.  I am thinking something tall and green and grassy.  I know I have something in my fabric stash that will work, I just have to find it.

Notice my little fairy riding the blue tail.  I believe that fairies can hold their breath for extremely long times so I have no worries for her being underwater.  I like to add a fairy or two in my projects when I can.  They are a favorite of mine.

Here is the rough draft of my next project, a rooster.  Its drawn on pattern paper so it has some weight to it and I can add fusible web pieces as I want them.  Of course, his tail will be bountiful and tall when I'm thru.

I shopped for a few more fabrics for the collage efforts in my future.  These are some I bought just last week.

This is my very first collage on my door, titled simply "Seahorse" it is very colorful and I love the process.
